Arugula Provolone Grilled Cheese for One



I absolutely love how this recipe combines cozy home cooked favorites with a fresh twist! The arugula adds a fresh peppery note to the dish and the dairy free provolone is so good you wouldn't even know it's allergy friendly. I use Calise Italian Bread which is made in a dairy, egg, nut, and sesame free facility, along with Violife Just Like Smoked Provolone Slices, and Earth Balance Soy Free Buttery Spread. All of these are amazing allergy friendly products that are staples in my house. I can't wait for you to try this delish allergy friendly recipe. I hope you enjoy!


(serves 1)


Ingredients: 2 slices of your favorite bread (I love Calise Italian Round Bread)

2 slices of Violife Just Like Smoked Provolone Slices (or any other dairy free cheese alternative)

1 cup fresh arugula

2 tsp fresh lemon juice

1 tsp olive oil

2 tsp Earth Balance Soy Free Buttery Spread (or any other type of dairy free butter)

Salt + black pepper


Heat up a large skillet on medium heat ~3-5 minutes. Butter one side of each bread slice and set aside. Place the arugula in a bowl with the olive oil, lemon juice, salt and pepper (to taste). Toss together and set aside.



Add one piece of bread to the heated skillet, place the provolone slices on top, then place the second piece of bread on top. Check to see that the bread is golden browned and crisp (around 3-5 minutes), then flip the sandwich over to finish the other side. Make sure to press down on the sandwich using a spatula, this will allow the cheese

to melt even more. Once both sides are golden brown, transfer the sandwich to a plate and cut in half.


Next, open the grilled cheese up and place ½ of the arugula mixture onto each part of the sandwich. Place the top of the sandwich back on and finish with a little more black pepper if you like.
