Cilantro Lime Baked Salmon with Avocado and Cilantro Rice


Salmon is one of my favorite types of fish, I love how versatile it is and how delicious salmon recipes are. Along with that, salmon is very nutritious providing us with omega-3 fatty acids, protein, vitamin Bs, potassium, and reduces intimation and risk of heart issues (Healthline).


I wanted to share the easiest way that I have found to make delicious and flavorful salmon in a short amount of time with very little prep and cleanup. I paired this cilantro lime baked salmon with an easy avocado salsa and cilantro lime rice. It is such a fresh and flavorful dish that I hope you love. This recipe is top allergy friendly (except fish).




 

Salmon and Avocado:


Ingredients:


2, 2 inch pieces of salmon

The juice of two limes

¼ cup fresh cilantro, finely chopped

4 garlic cloves, minced

3 tablespoons olive oil

2 avocados cubed

⅛ tsp salt

⅛ tsp pepper



Instructions:


Preheat the oven to 400 degrees.

Line a baking tray with foil, set aside. Combine the cilantro, lime juice, garlic, olive oil, salt, and pepper in a bowl. After they are combined, set ⅓ of the marinade aside. Place the salmon on the baking tray and pat dry. Spoon the cilantro garlic sauce evenly on top of the two pieces of salmon. Bake for 15-20 min or until the salmon is flaky and fully cooked. Serve with cilantro lime rice and avocado (see below).

(I also like to make roasted veggies to pair with this dish.)


Next, combine the cubed avocado with the remaining ⅓ of the marinade.

 

Cilantro Lime Rice:


Ingredients:


1 cup dry white rice

2 cups water

1 tablespoon olive oil

3 tablespoons fresh cilantro, finely chopped

The juice of one lime

The zest of one lime

⅛ tsp salt



Instructions:


Place the rice, water, olive oil, and salt in a medium pot and bring to a boil. Turn the stove to medium and allow most of the water to be absorbed by the rice. Cover and turn off the heat. Let the rice finish cooking for about 10-15 min. Uncover the rice and add the cilantro, lime juice, and lime zest. Stir until fully combined. Serve warm.
