Family Favorite Pancakes

This recipe has been one of my family's favorites for as long as I can remember. Pancake breakfasts are a weekly tradition for us, so this recipe is made quite a bit. The recipe is dairy, egg, peanut, tree nut, and soy free. You can also substitute flour to make it gluten free. I love pancakes, especially with fresh fruit, chocolate, and powdered sugar! There is often a debate over pancakes or waffles. Which one do you like best?


Recipe:

Makes 8-10 medium sized pancakes.


Ingredients:


1 cup all purpose flour

2 T granulated sugar

1 tsp. baking powder

1/2 tsp. baking soda

1 cup dairy free milk (I use rice milk, but you can use whatever you like best)

1/2 tsp cinnamon (optional)

1/2 cup chocolate chips (I use Enjoy Life's semi-sweet chips) (optional to make chocolate chip pancakes)

8 tsp. dairy free butter (I use Earth Balance) (one teaspoon to cook each pancake)


Directions:


Combine all of the dry ingredients in a mixing bowl with a whisk. Add the milk and whisk until there are no lumps. Heat up a large skillet or griddle pan on medium-high heat with one teaspoon of the butter. Let the pan get hot before using a half a cup measurement to spoon the batter into the pan. You can choose to make one large pancake or two smaller ones per pan, so you can pour whatever amount you choose. Let the pancake cook until the underside turns golden brown and the top starts to bubble, then flip it over and cook until the other side is golden brown.

You can use a spatula to check the edges so that the pancake doesn't


burn. At this point you can turn the stove down to medium heat. A dd more butter to the pan and repeat the steps until you use all of the batter.


To make chocolate chip pancakes: Follow all of the steps above, but right after adding the pancake batter to the pan, you can sprinkle about a tablespoon of chocolate chips onto each pancake.


I love to serve my pancakes with any type of fruit, maple syrup, powdered sugar, and sometimes a few chocolate chips on top. You can really put whatever you want on them, so be creative! This recipe is so versatile and is definitely a crowd pleaser! I hope you enjoy!
