I everyone! In honor of National Guacamole Day, here is my Avocado Salsa Verde recipe from my cookbook. This is one of my favorite recipes which I have definitely shared before, however I thought it would be perfect for today.
Ingredients:
4 avocados
1/4 tomatillo, diced
1/4 small white onion
1 teaspoon lime zest
Juice of one lime
Juice of ½ lemon
2 tablespoons olive oil
1 tablespoon fresh cilantro
1 clove of garlic
1 teaspoon jalapeño
1 jalapeño cut into circles (for garnish)
Instructions:
Transfer the avocados, tomatillos, onion, lime zest, fresh lime juice, fresh lemon juice, olive oil, fresh cilantro, garlic, and jalapeño into the bowl of a food processor. Pulse until smooth but still chunky. Garnish with the jalapeño circles and more cilantro. Serve with corn chips on the side.
